Healthy Sugar Cookie Dip for Insulin Resistance

Yes, the holidays are over, but that doesn't mean you need to swear off dessert for the rest of the year! Instead, focus on balance and making snacks and desserts that keep your blood sugar balanced.

So many of you have been requesting simple healthy dessert ideas for insulin resistance, so I created this no-bake option! Enter Healthy Sugar Cookie Dip. This delicious dessert contains only four ingredients, is dairy-free, gluten-free, plant-based, and low in sugar.

In this recipe, you will see a balance of protein, fiber, and fat.

The yogurt gives this dip a little protein boost. I use Siggi's non-dairy yogurt because it's lower in sugar and higher in protein than most plant-based yogurts. The coconut whipped cream and yogurt give it a boost of healthy fats.

I used Keto and Co vanilla cake mix because it's low in added sugar and gluten free. It also give the dip a nice fiber boost! However, you can use another keto cake or even cookie mix.

Pair the dip with fresh strawberries for some extra fiber and you've got a perfect snack!

Healthy Sugar Cookie Dip for Insulin Resistance

Ingredients:

  • 2 containers Siggi's toasted coconut plant-based yogurt (could use vanilla flavor)

  • 9 oz Cocowhip

  • 1 package Keto and Co vanilla cake mix

  • Sprinkles

  • Strawberries (for serving)

Directions:

  1. Combine yogurt, Cocowhip, and cake mix into a bowl. Mix until fully blended.

  2. Put dip into a serving bowl and top with sprinkles. Serve with fresh strawberries.
